Chef Martin Yan has WOWed audiences from Shanghai to San Francisco for over 40 years on American Public Television, promoting Chinese and Asian cuisine. Making it easy for home cooks has been his life-long mission.

Since 1978, Chef Yan has hosted the Yan Can Cook show on PBS—one of the longest-running cooking and traveling programs on television today—has written 30 cookbooks and is founder and chef of M.Y. China in San Francisco.

  • ½ Celery Stalk
  • 1  fresh, Red Chili Pepper  eg. such as Serrano
  • 4  fresh, Shiitake Mushrooms
  • 3  ounces Ham* good quality for extra flavor
  • 1  tablespoon Cooking Oil
  • ¼ cup White Vinegar
  • 1  tablespoon Chili Sauce
  • 1-½ teaspoons Pure Sesame Oil
  • 1  teaspoon Soy Sauce
  • 1  tablespoon Sugar
  • ½ teaspoon Salt
  • 1  teaspoon Cornstarch

  • 6  ounces Chicken Breast, boneless, skinless
  • 1  medium Carrot, (1 cup shredded)
  • 2  Celery Stalks
  • ¼ cup small Onion, thinly sliced
  • 2  Green Onion Stalks
  • 2  Garlic Cloves
  • 8  ounces Chinese Egg Noodles, fresh
  • 3  Wonton Wrappers, optional- (cut into matchstick size and fried)
  • 1  tablespoon Cooking Oil
  • 2  tablespoons Peanut Butter or Korean Sesame Paste
  • 1-½ tablespoons Rice Wine or Dry Sherry
  • 2  tablespoons Oyster-flavored Sauce
  • 1  tablespoon Soy Sauce
  • 2  teaspoons Sesame Oil
  • 1  teaspoon Cornstarch
  • ¼ teaspoon White Pepper
