Shanta Nimbark Sacharoff is the author of four books including her most recent cookbook, Cooking Together: A Vegetarian Co-op Cookbook. She will read a passage from this book to discuss the importance of sharing food to build community, followed by a cooking demonstration of how to make refrigerator pickles.

Shanta will talk about the tradition of pickling food and the health benefits of eating pickled and fermented foods. The preserved pickles sold in grocery sections of supermarkets take a long time to make. However, the refrigerator pickles that you will learn how to make in this workshop is prepared quickly and can keep for weeks in a refrigerator. Shanta will point out when to find pickling cucumbers at our farmers' markets and how to select them. She will also discuss the importance of buying cucumbers (and other vegetables) used in this recipe free of chemical spray.

Next, Shanta will demonstrate how to prepare refrigerator pickles, using a quick and simple method that requires only 6 ingredients. Shanta will show how to make refrigerator pickles with raw cucumbers and then demonstrate how to make pickles using partially steamed vegetables.
