Kimchi is a Korean dish consisting of vegetables (primarily cabbage) in a spicy sauce.  If kept cool, it has a lifetime of a couple of years. It is an ideal way to preserve a bountiful harvest against rot. We will talk about the elements that make up a kimchi and sample some traditional results.
