Josh Donald of Bernal Cutlery explains the differences among the Chinese cleavers, Japanese knives and Western knives.

Josh also demonstrates how to sharp cooking knives. 

Josh is the author of Sharp: The Definitive Introduction to Knives, Sharpening, and Cutting Techniques, With Recipes from Great Chefs. His book is available in print and eBook.
